Indian Stuffed Vegetables 3 is a cherished dish in Indian home kitchens, where the rich aromas of stuffed peppers or tomatoes invite family and friends to gather around the table. This dish, passed down through generations, often graces the table for a comforting dinner. It celebrates the art of home cooking with ingredients measured by instinct and experience rather than strict recipes.

The dish combines tender vegetables filled with seasoned rice, onions, and herbs, all brought together with a generous drizzle of olive oil. The result is a harmonious blend of flavors where the sweetness of the vegetables complements the savory filling. Each bite offers a satisfying balance of textures, making it a true delight for any shared meal.

Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil

Method

  1. Start by preparing the vegetables. If using peppers, slice off the tops and remove the seeds and membranes inside. If using tomatoes, slice off the tops and scoop out the insides with a spoon, being careful not to pierce the skin. Set the prepared vegetables aside on a plate.
  2. Rinse 150 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. Drain the rice well and set it aside.
  3. Finely chop 1 onion. In a medium-sized saucepan, heat 80 ml of olive oil over medium heat. Add the chopped onion and sauté until it turns golden brown and fragrant, which should take about 5 to 7 minutes.
  4. Add the rinsed rice to the saucepan with the onions, stirring well to coat the rice with the oil. This step helps the rice absorb flavors and prevents it from sticking together. Add herbs of your choice, such as cilantro or mint, to taste, stirring them into the rice mixture.
  5. Carefully stuff each prepared pepper or tomato with the rice mixture, pressing down gently to pack it in. Leave a little space at the top to allow the rice to expand as it cooks. Place the stuffed vegetables in a baking dish.
  6. Preheat your oven to 180°C (350°F). Drizzle a little olive oil over the stuffed vegetables and cover the dish with foil. Bake in the preheated oven until the vegetables are tender and the rice is fully cooked, which you can tell when the rice is soft and the vegetables are easily pierced with a fork.
  7. Remove the foil and bake for an additional 5 to 10 minutes to allow the tops to brown slightly. This adds a nice texture contrast to the dish. Once done, sprinkle fine sea salt and black pepper to taste over the stuffed vegetables.
  8. Serve the Indian Stuffed Vegetables immediately, while they are hot, as part of a shared meal. The flavors will be vibrant, and the dish is best enjoyed fresh from the oven.
