Ingredients

  • 400 gvegetables — sliced
  • 100 gflour

Method

  1. Begin by preparing the vegetables. Choose a mix of your favorite vegetables such as carrots, green beans, or cauliflower, and cut them into bite-sized pieces. Ensure they are dry to prevent splattering when frying.
  2. In a large mixing bowl, combine the 100 g of flour with a pinch of fine sea salt and black pepper to taste. This will be your batter base. Gradually add water, stirring continuously, until you achieve a smooth, thick batter that can coat the back of a spoon.
  3. Pour enough oil into a deep frying pan or wok to submerge the vegetables halfway. Heat the oil over medium-high heat until it shimmers but is not smoking. Test the oil by dropping a small amount of batter into it; the batter should sizzle and rise to the surface immediately.
  4. Once the oil is ready, dip each piece of vegetable into the batter, ensuring it is fully coated. Carefully place the battered vegetables into the hot oil, working in batches to avoid overcrowding the pan. Fry the vegetables until they are golden brown and crispy, about 3-4 minutes per batch, turning them halfway through for even cooking.
  5. As each batch finishes, remove the fried vegetables with a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil. While still hot, sprinkle with additional fine sea salt to enhance the flavor.
  6. Finish by squeezing fresh lemon juice over the fried bites for a burst of acidity that complements the savory flavors. Serve immediately while the bites are hot and crispy, perfect for sharing around the table.
