Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the lamb cubes. Make sure they are cut into uniform pieces, about 2.5 cm each, to ensure even cooking. Peel and finely chop the onion, as this will be used to infuse the lamb with flavor.
  2. In a large mixing bowl, combine the lamb cubes, chopped onion, 2 tablespoons of olive oil, and 1 teaspoon of cumin. Mix thoroughly to ensure each piece of lamb is well-coated with the oil and spices. This step is crucial for building the base flavor of the dish.
  3. Season the mixture with fine sea salt and black pepper to taste. Use your hands to mix again, ensuring the seasoning is evenly distributed. Let the mixture sit for a few minutes to allow the flavors to meld together.
  4. Thread the seasoned lamb cubes onto skewers, leaving a small gap between each piece to allow for even cooking. If using wooden skewers, soak them in water for at least 30 minutes prior to prevent burning.
  5. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill. Cook the lamb skewers for about 3-4 minutes on each side, turning occasionally, until the lamb is browned and slightly charred on the edges. The lamb should be cooked through but still juicy, with a slight pinkness in the center.
  6. Once cooked, remove the skewers from the grill and let them rest for a minute to allow the juices to redistribute. This resting period enhances the tenderness of the lamb.
