Indonesian Meat Pastry Bites 3

Indonesian Meat Pastry Bites are a beloved staple at home tables across the archipelago, where cooks embrace the joy of crafting these savory delights for casual gatherings and everyday meals. This homemade version captures the essence of family cooking, with each bite reflecting the careful, intuitive touch of salt and the indulgent embrace of fat, both essential in Indonesian kitchens.

Biting into one of these pastries, you are greeted by the rich, seasoned ground beef perfectly balanced with the sweetness of onions. The pastry is golden and crisp, encasing the flavorful filling in a tender embrace. These bites are meant to be shared, scattered across the table, inviting hands to reach and indulge in their comforting, familiar warmth.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion. This will ensure that the onion cooks evenly and blends well with the ground beef, providing a balanced flavor throughout the filling.
  2. In a large skillet, heat enough oil to coat the bottom over medium heat. Add the chopped onion and sauté until it becomes translucent and soft, releasing a sweet aroma, which should take about 3-4 minutes.
  3. Add 300 g of ground beef to the skillet with the onions. Break up the meat with a wooden spoon or spatula, stirring frequently until it is browned and cooked through. The beef should be crumbly and no longer pink.
  4. Season the beef and onion mixture with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed throughout the mixture.
  5. Lay out the 12 pastry wrappers on a clean surface. Place a spoonful of the beef mixture in the center of each wrapper, being careful not to overfill.
  6. Fold each pastry wrapper over the filling to form a triangle or rectangle, pressing the edges firmly to seal. You can use a fork to crimp the edges for a decorative touch and to ensure they are well sealed.
  7. In a deep frying pan, heat enough oil to submerge the pastry bites over medium-high heat. Once the oil is hot, carefully add the pastry bites in batches, frying them until they are golden brown and crispy, which should take about 2-3 minutes per side.
  8. Remove the fried pastry bites from the oil and drain them on a paper towel-lined plate to remove excess oil. Serve immediately while they are hot and crispy.
