Indonesian Meat Pastry Bites

Serves 4 to 6 Appetizer meat, Appetizers

Indonesian Meat Pastry Bites

Indonesian Meat Pastry Bites, a staple at home tables across the archipelago, capture the essence of communal Indonesian dining. This dish is rooted in everyday life, often appearing as a snack or appetizer during family meals. It showcases the practical ingenuity of Indonesian home cooks, who masterfully blend available ingredients into something both comforting and satisfying.

Each bite delivers a delightful contrast of textures: the crisp, golden pastry encases a savory filling of seasoned ground beef and onions. Salt is measured by feel, and black pepper adds a gentle warmth. Generously fried, these pastries are best enjoyed hot, fresh from the pan, inviting hands to reach out and share.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion. This will ensure that the onion cooks evenly and blends well with the ground beef, providing a consistent flavor throughout the filling.
  2. In a large skillet, heat a generous amount of oil over medium heat. Once the oil shimmers, add the chopped onion. Cook, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma.
  3. Add 300 g of ground beef to the skillet with the softened onions. Use a wooden spoon to break up the meat into small pieces, ensuring it cooks evenly. Continue to cook until the beef is browned all over and no pink remains, which will take on a rich, savory aroma.
  4. Season the beef and onion mixture with fine sea salt and black pepper to taste. Stir well to distribute the seasoning evenly throughout the mixture, enhancing the overall flavor of the filling.
  5. Lay out 12 pastry wrappers on a clean surface. Place a spoonful of the beef mixture in the center of each wrapper. Be careful not to overfill, as this will make it difficult to seal the pastries properly.
  6. Fold each wrapper over the filling to form a triangle or half-moon shape, depending on the type of wrapper used. Press the edges firmly with your fingers or a fork to seal, ensuring no filling escapes during frying.
  7. In a deep frying pan, heat enough oil to submerge the pastries over medium-high heat. Once the oil is hot, carefully add the pastries in batches, frying until they are golden brown and crispy on all sides. This should take a few minutes per side, and the pastries should float to the surface when done.
  8. Remove the pastries from the oil using a slotted spoon and drain on paper towels to remove excess oil. Serve immediately while they are still hot and crisp, allowing the flavors to be enjoyed at their peak.
