Indonesian Stuffed Vegetables, known for their simplicity and heartiness, are a staple in many Indonesian homes. This dish involves hollowed-out vegetables like peppers or tomatoes, filled with a savory mixture of rice, onion, and herbs. It's a comforting meal that reflects the home-style cooking found across the archipelago, where ingredients are used generously and flavors are adjusted by instinct.

The taste is a harmonious blend of the vegetables' natural sweetness and the savory filling, enhanced by a generous use of olive oil and a pinch of fine sea salt and black pepper. It's a dish meant for sharing, bringing family and friends together around the table, embodying the communal spirit of Indonesian dining.

Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing all the components for the dish. Rinse 150 g of rice under cold water until the water runs clear to remove excess starch, then drain well. Dice 1 onion finely and set aside. Carefully cut the tops off 4 peppers or tomatoes and scoop out the seeds and membranes, creating a hollow space for stuffing. Reserve the tops to use as lids later.
  2. In a medium saucepan, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the diced onion and sauté until it becomes translucent and fragrant, about 3-4 minutes. Add your choice of herbs, such as chopped cilantro or parsley, to the pan, stirring to release their aroma and infuse the oil with flavor.
  3. Add the rinsed rice to the saucepan, stirring to coat each grain with the flavored oil. Toast the rice for 2-3 minutes, stirring constantly, until the grains start to look slightly opaque. This step enhances the nutty flavor of the rice and helps it absorb the flavors better.
  4. Pour in enough water to cover the rice by about 1 cm, then season with fine sea salt and black pepper to taste. Bring the mixture to a gentle simmer, then reduce the heat to low and cover the pan. Cook until the rice is tender and has absorbed all the liquid, about 12-15 minutes. The rice should be fluffy and aromatic, with no excess moisture remaining.
  5. Preheat your oven to 180°C (350°F). Stuff each hollowed pepper or tomato with the cooked rice mixture, pressing down gently to pack it in. Place the reserved tops back on each vegetable to act as lids, helping to retain moisture during baking.
  6. Arrange the stuffed vegetables in a baking dish, ensuring they are snug but not overcrowded. Drizzle a little more olive oil over the tops to encourage browning and enhance flavor. Bake in the preheated oven until the vegetables are tender and the tops are slightly browned, about 25-30 minutes. The peppers should be soft but still hold their shape, and the tomatoes should be slightly wrinkled.
  7. Remove the dish from the oven and let it cool for a few minutes before serving. Taste and adjust the seasoning with more fine sea salt and black pepper if needed. Serve the Indonesian Stuffed Vegetables warm, inviting everyone to share and enjoy this comforting home-cooked dish.
