Ingredients

  • 3zucchini — grated

Method

Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters turn out crispy and not soggy.
  2. Crack 2 eggs into a large mixing bowl and beat them lightly with a fork until the yolks and whites are combined. Add the squeezed zucchini to the eggs, followed by 4 tablespoons of flour. Mix everything together until the flour is fully incorporated and the mixture holds together. Season with fine sea salt and black pepper to your taste, keeping in mind that the salt will enhance the natural flavors of the zucchini.
  3. Chop a handful of your preferred herbs, such as parsley or chives, and fold them into the zucchini mixture. The herbs will add a fresh aroma and a touch of color to the fritters, enhancing their overall flavor.
