Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters turn out crispy and not soggy.
  2. In a large mixing bowl, crack 2 eggs and beat them lightly with a fork until the yolks and whites are combined. Add the squeezed zucchini to the bowl along with 4 tablespoons of flour. Season the mixture with fine sea salt and black pepper to taste. Stir well until all ingredients are evenly incorporated, ensuring there are no lumps of flour.
  3. Chop a handful of your favorite fresh herbs, such as parsley or chives, and add them to the zucchini mixture. The herbs will add a fragrant aroma and a burst of flavor to the fritters. Mix everything together until the herbs are evenly distributed throughout the batter.
