This dish is prepared with a nod to the simplicity of home cooking, where salt is measured by intuition and lamb fat is embraced for its rich flavor. It's the kind of meal that brings the warmth of a family kitchen to the forefront, meant to be shared and savored together.

These skewers offer a delightful combination of tender lamb and sweet onion, marinated in olive oil and seasoned with cumin, salt, and pepper. The lamb's richness is perfectly balanced by the caramelized edges and the gentle warmth of cumin, creating a dish that is both comforting and slightly exotic. Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by cutting the 600 g of lamb into uniform cubes, approximately 2.5 cm each. This ensures even cooking. Peel and cut the onion into similar-sized chunks. Thread the lamb and onion alternately onto skewers, leaving a small space between each piece to allow for even heat distribution.
  2. In a small bowl, combine 2 tbsp of olive oil with 1 tsp of cumin. Mix well to create a marinade. Brush this mixture generously over the skewered lamb and onion, ensuring each piece is well coated. This will infuse the skewers with a deep, aromatic flavor.
  3. Preheat your grill or grill pan over medium-high heat. Once hot, place the skewers on the grill. You should hear a sizzle as the skewers make contact, indicating the grill is at the right temperature.
  4. Grill the skewers for about 3-4 minutes on each side. Turn them carefully using tongs to ensure even cooking. The lamb should develop a rich brown crust and the onions should become slightly translucent and charred at the edges.
  5. Once the lamb is cooked to your desired level of doneness, remove the skewers from the grill. The lamb should be juicy and tender, with a slight pink center if you prefer medium-rare.
  6. Finish by sprinkling fine sea salt and freshly ground black pepper to taste over the skewers. Serve immediately, allowing everyone at the table to enjoy the skewers while they are hot and flavorful.
