Method

  1. Start by grating the 3 zucchini using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial to ensure the fritters are crispy and not soggy.
  2. In a large mixing bowl, beat the 2 eggs until they are well combined. Add the squeezed zucchini to the bowl along with 4 tablespoons of flour. Mix until the ingredients are just combined, creating a batter that holds together but isn't too stiff.
  3. Chop a handful of fresh herbs, such as parsley or mint, and add them to the batter. Season the mixture with fine sea salt and black pepper to taste, ensuring the flavors are balanced. The herbs will add freshness and a traditional Lebanese flavor to the fritters.
  4. Heat a generous amount of oil in a large frying pan over medium-high heat. The oil should be about 1/4 inch deep to properly fry the fritters. Test the oil by dropping a small amount of batter into the pan; it should sizzle immediately.
