Method

  1. Start by preparing the vegetables. Choose a mix of your favorite vegetables such as zucchini, eggplant, or bell peppers, totaling 400 g. Wash them thoroughly and cut them into bite-sized pieces, ensuring they are uniform in size for even cooking.
  2. In a large mixing bowl, combine the 100 g of flour with a generous pinch of fine sea salt and a few grinds of black pepper. Toss the vegetable pieces in the seasoned flour until they are well coated. This will help create a crispy exterior once fried.
  3. Pour enough oil into a deep frying pan to submerge the vegetables halfway, about 2-3 cm deep. Heat the oil over medium-high heat until it shimmers and a small piece of vegetable dropped in sizzles immediately.
  4. Carefully add the floured vegetables to the hot oil in batches, avoiding overcrowding the pan. Fry the vegetables, turning occasionally, until they are golden brown and crispy on the outside. This should take about 4-5 minutes per batch, depending on the size of the pieces.
  5. Once fried, use a slotted spoon to transfer the vegetables to a plate lined with paper towels to drain any excess oil. Immediately sprinkle them with a little more fine sea salt while they are still hot, to enhance the flavor.
