Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing all the components for the Lebanese Grilled Skewers 2. Cut the 600 g of lamb into uniform cubes, about 2.5 cm each, to ensure even cooking. Peel and finely grate the onion, which will help tenderize the lamb and add moisture. Set these aside as you prepare the marinade.
  2. In a large mixing bowl, combine the grated onion with 2 tbsp of olive oil and 1 tsp of cumin. This mixture will infuse the lamb with flavor and help the spices adhere to the meat. Add the lamb cubes to the bowl, ensuring each piece is well coated with the marinade. Cover the bowl and let it sit at room temperature for about 15 minutes to allow the flavors to meld.
  3. While the lamb is marinating, prepare your skewers. If using wooden skewers, soak them in water to prevent burning during grilling. This step is crucial to ensure the skewers don't catch fire on the grill.
  4. Thread the marinated lamb cubes onto the skewers, leaving a small space between each piece to allow even cooking. This spacing ensures that each side of the lamb gets properly grilled and develops a nice char.
  5. Preheat your grill to high heat. Place the skewers on the grill, ensuring they are not crowded. Grill the lamb skewers, turning occasionally, until the meat is browned and slightly charred on the outside. The lamb should be cooked to your desired level of doneness, but it should remain juicy and tender inside.
  6. Once the lamb is cooked, remove the skewers from the grill. Finish by seasoning them with fine sea salt and black pepper to taste. Serve the skewers immediately, sharing them at the table for an authentic Lebanese dining experience.
