Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the components for the skewers. Cut the 600 g of lamb into uniform cubes, about 2.5 cm each, to ensure even cooking. Peel and quarter the onion, then separate the layers to use as spacers on the skewers. This will help flavor the meat as it grills.
  2. In a large mixing bowl, combine the lamb cubes with 2 tbsp of olive oil, 1 tsp of cumin, and a generous pinch of fine sea salt and black pepper. Toss everything together until the lamb is well-coated with the oil and spices. This step builds the foundational flavor of the dish, allowing the spices to penetrate the meat.
  3. Thread the lamb cubes onto skewers, alternating with onion layers. Ensure that the pieces are snug but not tightly packed, allowing heat to circulate evenly around each piece. This arrangement will help the lamb cook uniformly and absorb the onion's aroma.
  4. Preheat your grill to a high heat. Once hot, place the skewers on the grill. Cook the lamb skewers for about 4-5 minutes on each side, turning only once. The lamb should develop a rich, brown crust and the onions should show grill marks, indicating they are done.
