Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the components for the skewers. Cut 600 g of lamb into uniform cubes, about 2.5 cm each, to ensure even cooking. Peel and quarter the onion, then separate the layers to use as spacers between the lamb cubes on the skewers.
  2. In a large mixing bowl, combine the lamb cubes with 2 tbsp of olive oil. Add 1 tsp of cumin, and season generously with fine sea salt and black pepper to taste. Toss everything together until the lamb is well coated with the oil and spices, ensuring each piece is evenly seasoned.
  3. Thread the lamb cubes onto skewers, alternating with layers of onion. This not only adds flavor but also helps keep the meat juicy. Make sure to leave a little space between each piece to allow for even heat distribution.
  4. Preheat your grill to high heat. If using a stovetop grill pan, heat it until very hot. The high heat will help to sear the lamb, locking in the juices and creating a flavorful crust.
  5. Place the skewers on the grill. Cook each side for about 3-4 minutes, turning only once, until the lamb is browned and has a slightly charred exterior. The meat should be firm to the touch and have a juicy interior when cut.
  6. Once cooked, remove the skewers from the grill. Finish by sprinkling a little more fine sea salt over the top to enhance the flavors. Serve immediately, allowing the skewers to be the centerpiece of a shared meal.
