Middle Eastern Crispy Fritters 2

Middle Eastern Crispy Fritters 2 captures the essence of home cooking, where intuition and a generous hand reign. This dish is a staple at Middle Eastern tables, served casually among family and friends, embodying the warmth of shared meals. It's a recipe passed through generations, lovingly adapted by home cooks who measure salt with their fingertips and fry with instinct.

When biting into these golden fritters, expect a delicate crunch that gives way to a tender, flavorful interior. The zucchini brings moisture and a subtle sweetness, while fresh herbs add a fragrant lift. Seasoned simply with sea salt and black pepper, these fritters celebrate the beauty of straightforward, honest flavors.

Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour
  • for fryingoil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by grating 3 zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters become crispy rather than soggy.
  2. In a large mixing bowl, crack 2 eggs and beat them lightly with a fork. Add the squeezed zucchini to the eggs, followed by 4 tablespoons of flour. Mix until well combined, ensuring the flour is evenly distributed to bind the mixture.
  3. Chop a handful of fresh herbs such as parsley or cilantro and add them to the zucchini mixture. Season with fine sea salt and black pepper to taste, mixing thoroughly to incorporate the flavors throughout the batter.
  4. Heat a generous amount of oil in a large non-stick frying pan over medium-high heat. The oil should be enough to cover the bottom of the pan, ensuring the fritters fry evenly and develop a crispy exterior.
  5. Once the oil is hot, carefully drop spoonfuls of the zucchini mixture into the pan, flattening each slightly with the back of the spoon. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. The edges should be visibly crisp and the center firm to the touch.
  6. Remove the fritters from the pan and place them on a plate lined with paper towels to drain any excess oil. Sprinkle with a pinch of fine sea salt immediately while they are still hot to enhance the flavor.
  7. Serve the Middle Eastern Crispy Fritters 2 immediately, while they are hot and crispy, as part of a shared meal. Enjoy them as they are, or with a side of yogurt or a fresh salad to complement their rich flavors.
