Middle Eastern Grilled Skewers 2 brings the essence of home cooking straight to your table, capturing the casual yet deliberate approach of family kitchens. Tender lamb cubes are marinated in olive oil, onion, and a hint of cumin, creating a savory blend that is both bold and inviting. Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing the lamb cubes. If they are not already cut, slice the lamb into approximately 2.5 cm cubes. This size ensures even cooking and allows the flavors to penetrate the meat thoroughly.
  2. Peel and finely chop the onion. The smaller the pieces, the better they will blend into the marinade, imparting their sweetness and moisture to the lamb.
  3. In a large mixing bowl, combine the chopped onion, 2 tablespoons of olive oil, and 1 teaspoon of cumin. Stir these ingredients together until the cumin is evenly distributed and the onion is well-coated with oil.
  4. Add the lamb cubes to the bowl, mixing them thoroughly with the onion and spice mixture. Ensure each piece of lamb is coated with the marinade. Let the mixture sit for at least 15 minutes to allow the flavors to meld into the meat.
  5. Preheat your grill or grill pan to high heat. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece to ensure even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  6. Place the skewers on the hot grill. Cook the lamb for about 8-10 minutes, turning occasionally. Look for a rich brown crust on the outside and a juicy, tender interior. The lamb should be slightly pink in the center, indicating it's cooked to medium.
  7. Once the lamb is cooked to your liking, remove the skewers from the grill. Sprinkle fine sea salt and black pepper over the skewers to taste, enhancing the natural flavors of the lamb and spices.
  8. Serve the skewers immediately, ensuring they are hot and aromatic. The skewers are perfect for sharing, embodying the communal spirit of Middle Eastern dining.
