Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the lamb cubes. Pat them dry with paper towels to ensure they sear properly. Cut the onion into quarters, then separate the layers. This will allow them to cook evenly alongside the lamb.
  2. In a large mixing bowl, combine the lamb cubes, onion pieces, 2 tablespoons of olive oil, and 1 teaspoon of cumin. Toss everything together until the lamb and onions are well coated with the oil and spice. This step infuses the lamb with flavor and helps it caramelize during cooking.
  3. Thread the lamb cubes and onion pieces onto skewers, alternating between the two. Ensure the pieces are snugly fit but not too tight, allowing heat to circulate evenly. This arrangement helps the lamb cook through while the onions become tender and slightly charred.
  4. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the lamb is browned on all sides and the onions are soft with charred edges. The lamb should be juicy and slightly pink in the center when done.
  5. Remove the skewers from the grill and let them rest for a couple of minutes. This allows the juices to redistribute within the lamb, ensuring each bite is flavorful and moist.
  6. Finish by sprinkling fine sea salt and freshly ground black pepper over the skewers to taste. Serve immediately, allowing everyone to enjoy the freshly grilled flavors at their peak.
