It is a dish that finds its place in casual gatherings, often served as a snack or appetizer, perfect for sharing. These bites tell the story of home cooking traditions where ingredients are measured by instinct, and the table is always open for one more.

Biting into one of these pastries offers a satisfying crunch, followed by the savory warmth of spiced beef and onions. The pastry, crisp from frying, contrasts beautifully with the juicy filling, seasoned with a generous hand of salt and pepper. Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely dicing 1 onion. This will ensure that the onion cooks evenly and integrates well with the ground beef, providing a balanced flavor throughout the filling. Set the diced onion aside.
  2. In a medium-sized skillet, heat a generous amount of frying oil over medium heat. Once the oil is shimmering, add the diced onion and sauté until it turns translucent and soft, which should take a few minutes. This step builds the foundational flavor for your meat filling.
  3. Add 300 g of ground beef to the skillet with the onions. Use a wooden spoon to break up the meat into small pieces, ensuring it cooks evenly. Cook until the beef is browned and fully cooked through, with no pink remaining.
  4. Season the beef and onion mixture with fine sea salt and black pepper to taste. Stir well to incorporate the seasoning evenly throughout the mixture. Taste and adjust the seasoning if necessary, as this will be your last opportunity to do so before assembling the pastries.
  5. Lay out 12 pastry wrappers on a clean surface. Place a small spoonful of the beef mixture in the center of each wrapper. Be careful not to overfill, as this can cause the pastries to burst during cooking.
  6. Fold each pastry wrapper over the filling to create a half-moon shape. Press the edges firmly to seal, using a little water if necessary to help the edges stick together. Ensure there are no gaps or openings to prevent the filling from leaking out.
  7. In a large frying pan, heat more frying oil over medium-high heat. Once the oil is hot, carefully add the filled pastries in batches. Fry them until they are golden brown on both sides, turning once. The pastry should be crisp and the filling hot throughout.
  8. Remove the pastries from the oil and drain them briefly on paper towels to remove excess oil. Serve the Middle Eastern Meat Pastry Bites immediately, while they are still warm and crispy, perfect for sharing around the table.
