These fritters are seasoned with a practiced hand, where salt is a matter of personal touch, and each cook has their signature twist. Typically enjoyed as a snack or side dish, they are a common feature on tables set for sharing, bringing together the flavors of the region with each bite.

The fritters boast a delicate crunch on the outside while remaining tender and flavorful inside. With zucchini as the star, their mild sweetness is uplifted by fresh herbs, a hint of black pepper, and just the right amount of salt. The eggs and flour create a light batter, allowing the vegetables to shine through. Generously fried, these fritters are a simple yet satisfying treat, perfect for any gathering or quiet afternoon indulgence.

Ingredients

  • 3zucchini — grated
  • 2eggs
  • 4 tbspflour

Method

  1. Start by washing the 3 zucchini thoroughly under cold water. Trim the ends and grate them using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the fritters become crispy and not soggy.
  2. In a large mixing bowl, crack open the 2 eggs and beat them lightly with a fork until the yolks and whites are well combined. Add the grated zucchini to the bowl along with 4 tablespoons of flour. Mix everything together until the flour is fully incorporated and there are no lumps.
  3. Chop a handful of fresh herbs, such as cilantro or parsley, and add them to the zucchini mixture. Season with fine sea salt and black pepper to taste. Stir the mixture well to distribute the herbs and seasoning evenly throughout the batter.
  4. Heat a generous amount of oil in a large non-stick frying pan over medium-high heat. The oil should be enough to cover the bottom of the pan, about 1/4 inch deep. To test if the oil is ready, drop a small amount of batter into the pan; it should sizzle immediately.
  5. Once the oil is hot, carefully spoon heaping tablespoons of the zucchini mixture into the pan, flattening them slightly with the back of the spoon to form small patties. Fry the fritters in batches to avoid overcrowding the pan, which can lower the oil temperature.
  6. Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. The edges should be crisp, and the center should be cooked through. Adjust the heat as necessary to prevent burning.
  7. Once the fritters are cooked, remove them from the pan and place them on a plate lined with paper towels to absorb any excess oil. Sprinkle a pinch of fine sea salt over the hot fritters to enhance their flavor.
  8. Serve the crispy fritters immediately while they are still hot. They are best enjoyed fresh from the pan, offering a delightful contrast of crispy exterior and tender interior.
