Expect each bite to deliver a satisfying crunch, with the vegetables retaining a hint of their natural sweetness under a golden, crispy exterior. A squeeze of lemon adds a zesty brightness, while fine sea salt and black pepper provide a subtle yet essential seasoning. Ingredients

Method

  1. Start by washing and drying 400 g of vegetables thoroughly. Choose a mix of your favorite vegetables such as potatoes, cauliflower, and spinach. Cut them into bite-sized pieces, ensuring uniformity for even cooking. Set them aside in a large bowl.
  2. In a separate bowl, combine 100 g of flour with a pinch of fine sea salt and black pepper to taste. Gradually add water, stirring continuously, until you achieve a smooth, thick batter that can coat the back of a spoon without dripping off too quickly.
  3. Pour enough oil into a deep frying pan or wok to submerge the vegetable pieces halfway. Heat the oil over medium-high heat until a small drop of batter sizzles and rises to the surface immediately, indicating the oil is ready for frying.
  4. Dip each piece of vegetable into the batter, ensuring it is fully coated. Carefully lower the coated vegetables into the hot oil, frying in batches to avoid overcrowding the pan. Fry until the batter is golden brown and crispy, and the vegetables are tender when pierced with a fork.
  5. Use a slotted spoon to remove the fried bites from the oil, allowing excess oil to drain back into the pan. Place them on a plate lined with paper towels to absorb any remaining oil.
  6. Finish by sprinkling the fried bites with a squeeze of fresh lemon juice and an additional pinch of fine sea salt to enhance the flavors. Serve immediately while hot, encouraging everyone to share and enjoy the crispy, flavorful bites.
