Pakistani Grilled Skewers 3

Pakistani Grilled Skewers 3 captures the essence of home-cooked meals shared across Pakistan's bustling cities like Karachi, Lahore, Peshawar, and Islamabad. This dish brings together family and friends around the table, with each cook adding their own touch. Salt is measured by instinct, and generous amounts of fat ensure the lamb remains moist and flavorful, a hallmark of traditional Pakistani cooking.

With each bite, you'll experience the succulent tenderness of lamb cubes, complemented by the earthy warmth of cumin and the subtle sweetness of onion. The olive oil binds these flavors, creating a rich and satisfying mouthful that speaks to the soul of Pakistani cuisine. Enjoy them hot off the grill, their aroma inviting everyone to dig in.

Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing the lamb cubes. Ensure they are cut into uniform pieces, about 2 inches each, to promote even cooking. Peel and finely chop the onion, as this will be used to infuse flavor into the meat.
  2. In a large mixing bowl, combine the lamb cubes with 2 tablespoons of olive oil, 1 teaspoon of cumin, and the chopped onion. Mix thoroughly to ensure each piece of lamb is well-coated with the oil and spices. This step is crucial for building flavor, allowing the spices to penetrate the meat.
  3. Season the mixture with fine sea salt and black pepper to taste. Use your hands to mix again, ensuring an even distribution of seasoning. Let this marinate for at least 30 minutes to allow the flavors to meld, enhancing the taste of the skewers.
  4. Thread the marinated lamb cubes onto skewers, leaving a small gap between each piece to ensure even cooking. If using wooden skewers, soak them in water for about 15 minutes beforehand to prevent burning.
  5. Preheat your grill to medium-high heat. Once hot, place the skewers on the grill, ensuring they are not crowded. Grill the lamb skewers, turning occasionally, until the meat is browned and slightly charred on the edges, indicating they are cooked through. This should take about 10-12 minutes depending on the heat of your grill.
  6. Remove the skewers from the grill and let them rest for a few minutes. This resting period allows the juices to redistribute within the meat, ensuring each bite is juicy and flavorful.
  7. Finish by sprinkling a little more fine sea salt over the skewers if needed, adjusting to taste. Serve the skewers immediately while they are hot, encouraging a communal dining experience typical of Pakistani meals.
