Expect a medley of flavors, with peppers or tomatoes forming the tender, flavorful casing for a filling of rice, onion, and herbs. Generous splashes of olive oil meld it all together, while fine sea salt and black pepper add subtle depth. Each bite is a harmonious blend of textures and tastes, perfect for sharing with loved ones around the table.

Ingredients

Method

  1. Begin by preparing the vegetables. If using peppers, slice off the tops and remove the seeds and membranes. If using tomatoes, carefully scoop out the insides with a spoon, being cautious not to pierce the outer skin. Set the prepared vegetables aside on a plate.
  2. Rinse 150 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. Drain the rice thoroughly and set it aside.
  3. Finely chop 1 onion and set it aside. In a large pan, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and slightly golden, which should take about 5 to 7 minutes.
  4. Add the rinsed rice to the pan with the onions. Stir well to coat the rice with the oil and onion mixture. This step toasts the rice slightly, enhancing its flavor. Add your choice of herbs, such as cilantro or mint, and season with fine sea salt and black pepper to taste. Stir to combine.
  5. Carefully spoon the rice mixture into the prepared vegetables, packing it gently but firmly. Leave a small gap at the top to allow the rice to expand as it cooks. Arrange the stuffed vegetables in a baking dish, ensuring they are snugly fitted to prevent them from tipping over.
  6. Preheat your oven to 180°C (350°F). Pour a small amount of water into the base of the baking dish to create steam, which will help cook the rice. Cover the dish with foil and bake in the preheated oven until the vegetables are tender and the rice is fully cooked, which you can check by tasting a grain from the top of the stuffing.
  7. Once the vegetables are done, remove them from the oven and let them rest for a few minutes. Finish with a sprinkle of additional herbs if desired, and adjust the seasoning with more fine sea salt and black pepper to taste. Serve the stuffed vegetables warm, sharing them at the table as is traditional in Pakistani home cooking.
