Ingredients

Method

  1. Start by preparing the eggplants. Wash the 2 eggplants thoroughly and pat them dry with a clean kitchen towel. Slice them into 1 cm thick rounds, ensuring uniform thickness for even cooking. Sprinkle the slices with a generous pinch of fine sea salt on both sides and let them rest on a paper towel or a colander for about 15 minutes. This will draw out excess moisture and any bitterness.
  2. While the eggplants are resting, prepare the yogurt sauce. In a small bowl, combine 200 g of yogurt with 2 cloves of garlic, finely minced. Mix well until the garlic is evenly distributed throughout the yogurt. Set this aside to allow the flavors to meld.
  3. After the eggplants have rested, gently pat them dry with a paper towel to remove the moisture and excess salt. Heat a generous amount of olive oil in a large frying pan over medium-high heat. The oil should be enough to cover the bottom of the pan and come about halfway up the sides of the eggplant slices.
  4. Once the oil is hot, carefully add the eggplant slices in a single layer, ensuring they do not overlap. Fry them for about 3-4 minutes on each side, or until they turn golden brown and develop a slightly crispy texture on the edges. You may need to do this in batches, depending on the size of your pan.
  5. As each batch of eggplant finishes frying, transfer the slices to a plate lined with paper towels to drain any excess oil. Repeat the frying process with the remaining eggplant slices, adding more oil to the pan if necessary.
  6. Once all the eggplant slices are fried, arrange them on a serving platter. Drizzle the prepared yogurt sauce over the top, or serve it on the side for dipping. Finish with a final pinch of fine sea salt to taste, and serve immediately while the eggplant is warm and the yogurt is cool.
