Ingredients

Method

  1. Start by preparing the vegetables. Wash and dry 400 g of your chosen vegetables thoroughly. Cut them into bite-sized pieces, ensuring uniformity for even cooking. If using root vegetables, peel them first for a smoother texture.
  2. In a large mixing bowl, combine the vegetables with 100 g of flour. Toss them well to ensure each piece is evenly coated. This step helps the vegetables develop a crispy exterior when fried.
  3. Pour enough oil into a deep frying pan or pot to submerge the vegetables halfway. Heat the oil over medium-high heat until it shimmers, indicating it's hot enough for frying. Test by dropping a small piece of vegetable into the oil; it should sizzle immediately.
  4. Carefully add the floured vegetables to the hot oil in batches, avoiding overcrowding the pan. Fry each batch until the vegetables are golden brown and crispy on the outside, which should take a few minutes. Use a slotted spoon to remove them and drain on paper towels.
  5. While the vegetables are still warm, season them with fine sea salt and black pepper to taste. The warmth helps the seasoning adhere better, enhancing the flavor.
  6. Finish by squeezing fresh lemon juice over the fried bites for a bright, tangy contrast. Serve immediately while hot, encouraging everyone to gather and enjoy the shared dish.
