Persian Fried Bites

Persian Fried Bites are a beloved staple at Persian home tables, often emerging from kitchens when friends gather or during family lunches. Ingredients

Method

  1. Begin by washing and drying 400 g of vegetables thoroughly. Choose a mix of your favorite vegetables such as eggplant, zucchini, or bell peppers. Cut them into uniform bite-sized pieces, ensuring they are not too thick, which will help them cook evenly and quickly.
  2. In a large mixing bowl, combine 100 g of flour with a pinch of fine sea salt and black pepper to taste. Toss the vegetable pieces in the flour mixture, ensuring each piece is well coated. This will help create a crispy exterior when fried.
  3. Select a deep, heavy-bottomed pan for frying and pour in enough oil to submerge the vegetables halfway. Heat the oil over medium-high heat until it shimmers, indicating it's hot enough for frying. To test, drop a small piece of floured vegetable into the oil; it should sizzle immediately.
  4. Carefully add the floured vegetables to the hot oil in batches, avoiding overcrowding the pan. Fry them until they turn golden brown and crisp on the outside, which should take about 3 to 5 minutes per batch. Use a slotted spoon to remove the fried vegetables and drain them on a paper towel-lined plate to remove excess oil.
  5. Once all the vegetables are fried, transfer them to a serving platter. Squeeze fresh lemon juice generously over the top to add brightness and enhance the flavors. Finish with a sprinkle of fine sea salt to taste, ensuring the seasoning is balanced.
  6. Serve the Persian Fried Bites immediately while they are hot and crispy. These bites are perfect for sharing, embodying the communal spirit of Persian dining.
