Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your ingredients. Peel and finely grate the onion into a large mixing bowl. Add the lamb cubes, ensuring they are roughly uniform in size for even cooking. Pour in 2 tablespoons of olive oil, which will help tenderize the meat and add flavor.
  2. Sprinkle 1 teaspoon of cumin over the lamb and onion mixture. This spice will give the skewers their distinct Persian aroma and depth. Season generously with fine sea salt and black pepper, adjusting to your taste preference. Use your hands to mix everything thoroughly, ensuring each piece of lamb is well-coated with the marinade.
  3. Cover the bowl with plastic wrap and let the lamb marinate in the refrigerator for at least 1 hour. This allows the flavors to penetrate the meat, making it more flavorful and tender.
  4. While the lamb is marinating, soak wooden skewers in water if you are using them, to prevent them from burning on the grill. If using metal skewers, this step can be skipped.
  5. Once marinated, thread the lamb cubes onto the skewers, leaving a small space between each piece to ensure even cooking. Preheat your grill to medium-high heat. If using a stovetop grill pan, heat it over medium-high heat until hot.
  6. Place the skewers on the grill, turning every few minutes to ensure even cooking. Cook until the lamb is browned on the outside and cooked to your desired level of doneness. The lamb should be juicy and slightly charred, with a rich aroma from the cumin and onion.
  7. Remove the skewers from the grill and immediately sprinkle a final touch of sea salt to enhance the flavors. Serve the skewers hot, straight from the grill, as part of a shared meal with family and friends.
