Persian Meat Pastry Bites 2

Persian Meat Pastry Bites find their home on the family tables of Iran, where they are a cherished staple of casual gatherings. This dish captures the essence of home cooking, crafted with a familiar ease that comes from generations of practice. Here, salt is measured by intuition, and richness is embraced with every generous splash of oil. These pastries are not reserved for grand occasions but celebrated in the everyday rhythm of Persian life.

The experience of biting into one of these pastries is a delightful contrast of textures. The crispy, golden pastry gives way to a savory filling of seasoned beef and onions, each flavor distinct yet harmonious. The simplicity of salt and pepper allows the natural richness of the meat to shine, making these bites an irresistible offering, perfect for sharing with those gathered around the table.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Start by finely dicing 1 onion. This will ensure it cooks evenly and blends well with the ground beef. Set aside the diced onion for later use.
  2. In a mixing bowl, combine 300 g of ground beef with the diced onion. Season generously with fine sea salt and black pepper to taste. Use your hands to mix thoroughly until the onion is evenly distributed throughout the beef.
  3. Heat a large skillet over medium heat and add enough oil to coat the bottom. Once the oil is shimmering, add the beef and onion mixture. Cook, stirring occasionally, until the beef is browned and cooked through, and the onions are soft and translucent. This should result in a fragrant mixture with no pink remaining in the beef.
  4. Remove the skillet from heat and let the beef mixture cool slightly. This will make it easier to handle when filling the pastry wrappers.
  5. Lay out the 12 pastry wrappers on a clean surface. Place a spoonful of the beef mixture in the center of each wrapper. Fold the wrappers over the filling, sealing the edges by pressing them together firmly, ensuring no filling escapes during cooking.
  6. In a clean skillet, heat more oil over medium-high heat. Once the oil is hot, carefully place the filled pastry bites in the skillet, seam side down. Fry in batches if necessary, ensuring each bite has enough space to cook evenly.
  7. Cook the pastry bites until they are golden brown and crisp on both sides. This should take a few minutes per side, and you may need to adjust the heat to prevent burning.
  8. Once cooked, remove the pastry bites from the skillet and drain on paper towels to remove excess oil. Finish with a sprinkle of fine sea salt to taste, and serve immediately while hot and crisp.
