Method

  2. In a large mixing bowl, beat the 2 eggs until the yolks and whites are fully combined. Add the squeezed zucchini, 4 tbsp of flour, and a generous pinch of fine sea salt and black pepper. Mix everything together until the ingredients are well incorporated and the mixture holds together when pressed.
  3. Finely chop a handful of your preferred herbs, such as cilantro or mint, and fold them into the zucchini mixture. The herbs will add a fresh flavor that complements the fritters beautifully.
