Method

  1. Start by washing and drying 400 g of vegetables thoroughly. Cut them into bite-sized pieces, ensuring uniformity for even cooking. This step is crucial for achieving a consistent texture across all the bites.
  2. In a large mixing bowl, combine 100 g of flour with a pinch of fine sea salt and black pepper to taste. Toss the vegetable pieces in the flour mixture, making sure each piece is evenly coated. This coating will help create a crispy exterior when fried.
  3. Heat a generous amount of oil in a deep frying pan or wok over medium-high heat. The oil should be deep enough to submerge the vegetable pieces halfway. Test the oil's readiness by dropping a small piece of coated vegetable into the pan; it should sizzle immediately.
  4. Carefully add the floured vegetable pieces to the hot oil in batches, avoiding overcrowding. Fry them until they turn golden brown and crispy, which will take a few minutes. Use a slotted spoon to turn them occasionally for even cooking.
  5. Once the vegetables are golden and crisp, remove them from the oil using a slotted spoon. Drain them on a plate lined with paper towels to remove excess oil. This step ensures the bites remain crispy and not greasy.
