Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by cutting the 600 g of lamb into even-sized cubes, about 2 cm each. This ensures they cook uniformly. Peel and finely chop the onion, which will add moisture and flavor to the lamb.
  2. In a large mixing bowl, combine the lamb cubes and chopped onion. Drizzle 2 tbsp of olive oil over the mixture, ensuring each piece is well-coated. This oil will help the spices adhere to the meat and promote even cooking.
  3. Sprinkle 1 tsp of cumin over the lamb and onion mixture. Add fine sea salt and black pepper to taste, mixing thoroughly with your hands to ensure the spices are evenly distributed. The cumin adds a warm, earthy flavor that complements the lamb.
  4. Thread the seasoned lamb cubes onto skewers, leaving a small space between each piece to allow for even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  5. Preheat your grill to medium-high heat. Place the skewers on the grill, ensuring they are spaced apart to allow for proper air circulation. Grill the skewers, turning occasionally, until the lamb is browned on all sides and cooked to your desired doneness. The lamb should be slightly charred on the outside and juicy on the inside.
  6. Once the lamb is cooked, remove the skewers from the grill and let them rest for a few minutes. This resting period allows the juices to redistribute, ensuring the meat remains tender.
  7. Finish by sprinkling a little more fine sea salt over the skewers if needed, adjusting to taste. Serve the skewers immediately, allowing everyone at the table to enjoy them while they are hot and flavorful.
