Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing the lamb cubes and onion. Cut the onion into large chunks, roughly the same size as the lamb cubes, to ensure even cooking. This will help the flavors meld together as they grill.
  2. In a large mixing bowl, combine the 600 g lamb cubes with 2 tbsp olive oil and 1 tsp cumin. Toss the lamb thoroughly to coat each piece with the oil and spice, which will help the meat absorb the flavors and prevent sticking during grilling.
  3. Season the lamb with fine sea salt and black pepper to taste. Use your hands to mix well, ensuring the seasoning is evenly distributed. This step is crucial for developing the savory depth of flavor characteristic of Vietnamese grilled dishes.
  4. Thread the lamb cubes and onion chunks onto skewers, alternating between meat and onion. This arrangement allows the onion to impart its moisture and sweetness to the lamb as it cooks.
