Vietnamese Meat Pastry Bites 2

Vietnamese Meat Pastry Bites 2 is a beloved staple at home tables, celebrated for its simplicity and comforting flavors. Often enjoyed during casual family meals, these bites offer a glimpse into the everyday culinary practices of Vietnamese households. Each bite encapsulates the essence of home cooking, where salt is intuitively measured, and a generous hand with fat ensures rich, satisfying mouthfuls.

Expect a crispy, golden pastry that gives way to a savory filling of seasoned ground beef and onions. The balance of fine sea salt and black pepper enhances the natural flavors, creating a delightful contrast against the flaky exterior. These bites are crafted for sharing, inviting everyone to reach across the table and savor each delicious morsel.

Ingredients

  • 300 gground beef
  • 1onion
  • 12pastry wrappers
  • for fryingoil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely dicing 1 onion. This will ensure the pieces cook evenly and blend seamlessly with the ground beef, providing a balanced flavor throughout the filling.
  2. In a medium-sized skillet, heat a generous amount of oil over medium heat. Once the oil shimmers, add the diced onion. Cook, stirring occasionally, until the onion becomes translucent and fragrant, which should take about 3-4 minutes.
  3. Add 300 g of ground beef to the skillet with the onions. Use a wooden spoon to break the beef into small pieces as it cooks. Continue to cook until the beef is browned and cooked through, with no pink remaining. Season with fine sea salt and black pepper to taste, ensuring the flavors are well distributed.
  4. Lay out 12 pastry wrappers on a clean surface. Place a spoonful of the beef and onion mixture in the center of each wrapper. Be careful not to overfill, as this will make sealing difficult.
  5. Fold each pastry wrapper over the filling to form a half-moon shape. Press the edges firmly together, using a fork to crimp and seal the edges securely, ensuring no filling escapes during cooking.
  6. In a clean skillet, heat more oil over medium-high heat. Once the oil is hot, carefully add the sealed pastry bites in batches, ensuring not to overcrowd the pan. Fry until the wrappers are golden brown and crispy, turning once to ensure even cooking on both sides.
  7. Remove the cooked pastry bites from the skillet and drain on paper towels to remove excess oil. Finish with a light sprinkle of fine sea salt while they are still hot, enhancing the flavor. Serve immediately, while the pastry is crisp and the filling is warm.
