Ingredients

  • 400 gvegetables — sliced
  • 100 gflour
  • for fryingoil
  • lemon — to serve
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the vegetables. Wash and dry 400 g of your chosen vegetables thoroughly. Cut them into bite-sized pieces, ensuring uniformity for even cooking. Set them aside in a large mixing bowl.
  2. Add 100 g of flour to the bowl with the vegetables. Season generously with fine sea salt and black pepper to taste. Toss the vegetables in the flour until each piece is well coated, ensuring the flour adheres to the surface.
  3. In a deep frying pan or pot, pour enough oil for frying, about 2-3 inches deep. Heat the oil over medium-high heat until it reaches a temperature where a small piece of vegetable dropped in sizzles immediately.
  4. Carefully add the floured vegetables to the hot oil in small batches, avoiding overcrowding the pan. Fry them until they are golden brown and crisp on the outside, which should take about 3-5 minutes per batch. Use a slotted spoon to remove them from the oil and drain on paper towels.
  5. Once all the vegetables are fried, transfer them to a serving platter. Squeeze fresh lemon juice over the top for a burst of brightness. Adjust the seasoning with more fine sea salt if needed, and serve immediately while the bites are still hot and crisp.
