West African Stuffed Vegetables 2 is a cherished home-cooked dish that brings comfort and warmth to everyday family meals. This version finds its roots in home kitchens where the cook's instincts guide the seasoning, and olive oil is poured with a generous hand. It's a dish that embodies the simplicity and satisfaction of West African home dining, often made to bring families together around the table.

The dish is a medley of tender vegetables, typically peppers or tomatoes, filled with a savory mixture of rice, herbs, and onions. Each bite offers a balance of rich flavors, with the olive oil imparting a lush texture that complements the seasoned filling. It's a dish meant for sharing, inviting everyone to partake in its wholesome taste.

Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Start by washing the 4 peppers or tomatoes thoroughly under running water. If using peppers, cut off the tops and remove the seeds and membranes. For tomatoes, carefully scoop out the insides with a spoon, making sure not to pierce the outer skin. Set the prepared vegetables aside on a plate.
  2. Rinse 150 g of rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming too sticky. Drain well and set aside.
  3. Finely chop 1 onion and any herbs you have chosen to use. In a large skillet, heat 80 ml of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant, stirring occasionally to ensure even cooking.
  4. Add the rinsed rice to the skillet with the onions. Stir well to coat the rice with the oil and onion mixture. This step helps the rice absorb flavors and prevents it from clumping together.
  5. Stir in the chopped herbs, and season the mixture with fine sea salt and black pepper to taste. Continue to cook, stirring frequently, until the rice starts to turn golden and releases a nutty aroma, indicating it is well toasted.
  6. Carefully stuff the prepared peppers or tomatoes with the rice mixture, pressing down gently to ensure they are fully filled. Place them in a baking dish, ensuring they are snugly fitted to prevent them from tipping over during cooking.
  7. Cover the baking dish with foil and place it in a preheated oven at 180°C (350°F). Bake until the vegetables are tender and the rice is fully cooked, which you can tell when the rice grains are plump and tender, and the vegetables have softened but still hold their shape.
  8. Remove the foil and allow the stuffed vegetables to bake for an additional few minutes to develop a slight golden color on top. Once done, remove from the oven, sprinkle with a little more fresh herbs if desired, and serve immediately.
