Çay

Çay, the quintessential Turkish tea, is a staple in homes across Turkey. Whether it's the first sip of the morning or a late afternoon pick-me-up, this brew is an integral part of daily life. While every household has its own way of preparing it, the essence remains the same: a comforting and aromatic blend that invites conversation and relaxation.

The tea should be robust and full-bodied, with a slight astringency balanced by the optional sweetness of sugar. Its deep amber color is a promise of warmth and hospitality. Enjoy it in small, tulip-shaped glasses, which allow the rich flavors to unfold with each sip, a true reflection of Turkish hospitality.

Ingredients

  • 2 tbspblack tea leaves

Method

  1. Begin by filling a small teapot with 2 tablespoons of black tea leaves. This teapot will sit atop a larger pot, creating a double-boiler effect. The larger pot should be filled with 500 ml of water. This setup ensures a gentle, even heat that allows the tea to brew without becoming bitter.
  2. Place the larger pot with water on the stove and bring it to a gentle boil over medium heat. Once the water is boiling, carefully place the smaller teapot with the tea leaves on top of the larger pot. This indirect heat will allow the tea leaves to release their full aroma and flavor slowly.
  3. Allow the tea to brew for about 10 to 15 minutes. You will know the tea is ready when the liquid in the teapot turns a deep, rich amber color and the aroma is robust and fragrant. This slow brewing process is essential for achieving the traditional taste of Turkish Çay.
  4. While the tea is brewing, prepare the traditional glassware by rinsing it with hot water. This step warms the glasses, ensuring that the tea remains hot when served. Turkish tea is traditionally served in small, tulip-shaped glasses that enhance the drinking experience.
  5. Once the tea has reached the desired color and aroma, carefully pour a small amount of the brewed tea into each glass, filling about one-third of the glass. Then, top off each glass with hot water from the larger pot. This method allows each person to adjust the strength of their tea to their liking.
  6. Offer sugar on the side, allowing each guest to sweeten their tea to taste. Turkish tea is often enjoyed with a touch of sweetness, but the amount can vary based on personal preference. Serve the tea immediately, ensuring it is hot and aromatic, and enjoy the communal experience of sharing Turkish Çay.
