Şalgam, a beloved drink hailing from the Adana region, is a staple at any gathering where rich, spicy foods are served. It's the cool, tangy companion to the fiery dishes typical of southern Turkey, making it a frequent presence on tables laden with kebabs and other grilled meats. Traditionally, it's prepared with an intuitive touch — salt judged by hand, with a generous use of fat, crafted to balance the bold flavors of the region's cuisine.

The taste of Şalgam is a vibrant blend of sour and spicy, with an earthy depth from the fermented turnip juice. Chilled with ice and occasionally spiked with hot peppers, it delivers a refreshing sharpness that cuts through the richness of the main dishes. This homemade version captures the essence of family meals in Adana, where flavors are bold and hospitality is abundant.

Method

  1. Begin by chilling the şalgam juice. Pour 500 ml of şalgam juice into a large glass pitcher. Place the pitcher in the refrigerator for at least 2 hours to ensure it is thoroughly chilled. This step is crucial as the cold temperature enhances the tangy and savory flavors of the şalgam.
  2. While the şalgam juice is chilling, prepare the hot peppers. Select a few small, fresh hot peppers, and rinse them under cold water. Pat them dry with a clean kitchen towel, and then slice them thinly. The thin slices will release their heat and aroma more effectively when added to the drink.
  3. Once the şalgam juice is chilled, remove the pitcher from the refrigerator. Carefully measure the amount of ice needed to fill the pitcher without overflowing. Add the ice cubes to the pitcher, ensuring they are evenly distributed to keep the drink cold and refreshing.
  4. Gently add the sliced hot peppers to the pitcher. Stir the mixture slowly with a long spoon, making sure to combine the ingredients without losing the delicate aromas. The peppers should float and infuse the şalgam juice with a subtle heat, enhancing its complexity.
  5. Serve the şalgam immediately. Pour the chilled and spiced şalgam juice into traditional Turkish glassware, such as small tulip-shaped glasses. This type of glassware not only adds to the authenticity but also allows the vibrant color and aroma of the şalgam to be fully appreciated.
