Ayran, a refreshing yogurt-based drink, has long been a staple on Anatolian tables, served alongside meals to complement the rich and hearty flavors of Turkish cuisine. Typically enjoyed during hot summer days, it offers a cooling contrast to the warmth of the season. This home version captures the essence of how a Turkish family might prepare it, with salt measured by instinct and a generous hand ensuring a full-bodied richness.

In its ideal form, Ayran is a harmonious blend of tangy yogurt, a touch of salt, and cold water, whisked together until frothy and smooth. Each sip should be a balance of creamy and refreshing, with the salt enhancing the yogurt's natural tang. Serve it over ice for an added chill, and let it soothe the palate between bites of vibrant, spiced dishes.

Ingredients

  • 400 gplain yogurt
  • 300 mlcold water
  • 1/2 tspfine sea salt
  • as neededice

Method

  1. Start by chilling your serving glasses in the refrigerator. This step ensures that the Ayran stays cold and refreshing when served. If you don't have space in the fridge, you can also fill the glasses with ice water to cool them down while you prepare the drink.
  2. Measure 400 g of plain yogurt into a large mixing bowl. It's important to use plain yogurt to maintain the traditional flavor profile of Ayran. Ensure the yogurt is fresh and of good quality, as this will directly affect the taste of the final drink.
  3. Add 300 ml of cold water to the yogurt. Using cold water helps in achieving the desired refreshing quality of Ayran. Stir gently with a whisk or a spoon to start combining the yogurt and water, being careful not to over-mix which can cause frothiness.
  4. Sprinkle in 1/2 tsp of fine sea salt. The salt enhances the flavors and brings out the tanginess of the yogurt. Stir again gently until the salt is fully dissolved and the mixture is smooth and uniform in texture.
  5. If you prefer your Ayran extra cold, add a few ice cubes directly into the mixture. This step is optional but recommended on hot days for an extra refreshing drink. Stir briefly to distribute the coldness from the ice throughout the Ayran.
  6. Pour the Ayran into the chilled glasses, filling them almost to the brim. The traditional way to serve Ayran is in a glass, allowing the drinker to appreciate its creamy texture and refreshing taste. Serve immediately to enjoy the Ayran at its best temperature and consistency.
