Serves 4 to 6 vegan

Genmaicha

Genmaicha, a comforting Japanese green tea blend, is a staple in many households. Often enjoyed during quiet afternoons or shared with friends over conversation, this tea combines the earthy notes of green tea with the nutty aroma of toasted rice. Traditionally, it is a home kitchen favorite, where the balance of flavors is lovingly adjusted by hand.

The tea offers a harmonious mix of grassy and toasty flavors, with a subtle hint of salt that elevates its natural sweetness. When prepared with care, Genmaicha is smooth and warming, offering a gentle embrace to the palate. The optional addition of honey can provide a touch of sweetness, enhancing its soothing qualities.

Ingredients

  • 4 ggenmaicha
  • 300 mlhot water
  • 1 tsptoasted rice
  • to tasteoptional honey
  • 1 pinchsalt

Method

  1. Begin by boiling water in a kettle until it reaches just below boiling point, around 80°C (176°F). This temperature helps to preserve the delicate flavors of the green tea leaves in the genmaicha.
  2. Measure 4 grams of genmaicha tea leaves carefully using a kitchen scale. This ensures the right balance of green tea and roasted rice, which is crucial for achieving the traditional flavor.
  3. Place the measured genmaicha into a teapot or a heatproof glass container. The container should be large enough to allow the tea leaves to expand and release their full aroma.
  4. Pour 300 ml of the hot water over the genmaicha in the teapot. Ensure the water covers the leaves completely to allow them to steep properly.
  5. Let the tea steep for about 2 to 3 minutes, gently swirling the pot occasionally. The tea should develop a light golden color with a nutty aroma, indicating it's ready.
  6. Strain the tea into cups, ensuring no leaves or rice grains pass through. This step is important to provide a smooth drinking experience.
  7. Add 1 teaspoon of toasted rice to each cup for an extra layer of flavor and texture. This enhances the nutty aroma and complements the tea's natural taste.
  8. If desired, add a pinch of salt and a small amount of honey to taste. The salt enhances the roasted notes, while honey adds a subtle sweetness, balancing the flavors.
  9. Serve the genmaicha immediately in traditional Japanese teacups. Enjoy the tea while it's warm to fully appreciate its aromatic and comforting qualities.
