Persian cooks often prepare it by feel, balancing the salt and sugar to taste, and ensuring it is ready to quench the thirst of many.

The drink offers a vibrant citrus burst from fresh lemons or oranges, harmonized with the sweetness of sugar, all mingling in a clear, icy base. The result is a perfectly chilled libation that refreshes with every sip, inviting a moment of reprieve and enjoyment at the table.

Ingredients

  • 4lemons or oranges
  • 100 gsugar
  • 1 Lwater
  • as neededice

Method

  1. Begin by preparing the citrus fruits. If using lemons, roll them on the countertop with your palm to loosen the juice. Cut each lemon or orange in half and juice them into a bowl, ensuring you remove any seeds. You should have about 200 ml of juice once finished.
  2. In a medium saucepan, combine 100 g of sugar with 1 L of water. Place the saucepan over medium heat and stir gently until the sugar is completely dissolved. The water should become clear and slightly thicker, indicating the sugar has fully integrated.
  3. Remove the saucepan from the heat and allow the sugar water to cool slightly. Once it is lukewarm, pour in the freshly squeezed citrus juice. Stir gently to combine, ensuring the flavors meld without losing the aromatic quality of the citrus.
  4. Transfer the mixture to a large pitcher. Cover and place it in the refrigerator to chill for at least 2 hours. This chilling time allows the flavors to develop fully and ensures the drink is refreshing when served.
  5. When ready to serve, fill traditional Persian glassware with ice as needed. Pour the chilled fruit drink over the ice, ensuring each glass receives an even amount of liquid and flavor. Serve immediately, enjoying the balance of sweet and tart that characterizes this traditional Persian refreshment.
