The drink should envelop the palate with a creamy tang, punctuated by a whisper of salt that enhances rather than overwhelms. It is meant to be cool and invigorating, with ice gently clinking in the glass, offering a soothing contrast to the warm, bustling atmosphere of a Persian meal. This is yogurt drink done right, familiar and comforting in its simplicity.

Ingredients

  • 400 gyogurt
  • 300 mlcold water
  • 1/2 tspfine sea salt
  • as neededice

Method

  1. Begin by ensuring your yogurt and water are both chilled. Place 400 g of yogurt in the refrigerator for at least an hour before you start, if it isn't already cold. This step is crucial as it ensures the drink is refreshing and maintains the traditional cooling effect.
  2. Measure 300 ml of cold water using a measuring jug. It's important to be precise with this measurement to maintain the correct consistency and flavor balance of the drink.
  3. In a large mixing bowl, combine the chilled yogurt and cold water. Use a whisk to gently blend them together until the mixture is smooth and uniform. Be careful not to whisk too vigorously, as this can cause the yogurt to lose its creamy texture and the drink to become too frothy.
  4. Add 1/2 teaspoon of fine sea salt to the yogurt mixture. Stir gently with a spoon until the salt is fully dissolved. The salt should enhance the flavor without overpowering the delicate taste of the yogurt.
  5. Prepare your serving glasses by placing a few ice cubes in each. This will keep the drink cold and refreshing when served.
  6. Pour the yogurt drink into the prepared glasses, filling them about three-quarters full to leave room for the ice. Serve immediately to enjoy the optimal taste and temperature, using traditional glassware if available for an authentic experience.
