Persian Yogurt Drink, known for its refreshing simplicity, is a staple at home tables across Iran. This version celebrates the intuitive approach of Persian family cooks, where salt is measured by feel and yogurt is liberally embraced. Often accompanying hearty meals or served as a soothing refreshment on warm days, this drink embodies the unpretentious comfort of a Persian home.

The drink is a harmonious balance of creamy yogurt tempered with a touch of sea salt, resulting in a tangy, cooling elixir. The addition of cold water and ice transforms it into a revitalizing treat, perfect for quenching thirst and complementing rich dishes. Its texture is smooth, offering a delightful contrast to the vibrant flavors of Persian cuisine.

Ingredients

  • 400 gyogurt
  • 300 mlcold water
  • 1/2 tspfine sea salt
  • as neededice

Method

  1. Start by ensuring your yogurt is chilled. Use 400 g of plain yogurt, ideally full-fat for a richer taste. Place it in the refrigerator for at least an hour before you begin to ensure it is well-chilled, which is crucial for achieving the refreshing quality of this drink.
  2. Once the yogurt is chilled, measure out 300 ml of cold water. It's important to use cold water to maintain the drink's refreshing nature. Pour the water into a large mixing bowl or pitcher where you will combine all the ingredients.
  3. Add 1/2 teaspoon of fine sea salt to the water. This salt will enhance the flavors of the yogurt, so measure carefully to maintain the traditional balance. Stir gently to dissolve the salt completely in the water.
  4. Now, gradually add the chilled yogurt to the salted water. Use a whisk to combine them gently. Whisk until the mixture is smooth and homogenous, ensuring there are no lumps of yogurt left. The mixture should have a creamy consistency and a slightly tangy aroma.
  5. Prepare your serving glasses by placing a few ice cubes in each. This will keep the drink cold and refreshing when served. Pour the yogurt drink into the glasses over the ice cubes, filling them to about three-quarters full.
  6. Serve the Persian Yogurt Drink immediately in traditional glassware, if available. The drink should be enjoyed fresh, with its cool, tangy flavor and smooth texture providing a refreshing complement to any meal.
