American Seed Loaf 2

American Seed Loaf 2 is a hearty bread that brings together the simple yet robust flavors of flour, yeast, and sesame seeds. It's a staple on American home tables, where cooks judge salt by hand and use fat generously, creating a loaf that's both rustic and comforting.

This loaf is known for its nutty aroma and slightly chewy texture, thanks to the sesame seeds that are generously sprinkled throughout. It's a bread that invites sharing, often enjoyed warm and fresh, embodying the essence of homemade American cooking.

Ingredients

  • 500 gflour
  • 7 gyeast
  • 300 mlwater
  • 2 tbspsesame seeds
  • 1 tspfine sea salt

Method

  1. In a large mixing bowl, combine 500 g of flour, 7 g of yeast, and 1 tsp of fine sea salt. Stir them together with a wooden spoon to evenly distribute the yeast and salt throughout the flour.
  2. Gradually add 300 ml of lukewarm water to the dry ingredients, stirring continuously. The water should be warm to the touch but not hot, as this helps activate the yeast without killing it. Stir until a rough dough forms.
  3. Turn the dough out onto a lightly floured surface. Knead the dough by pushing it away from you with the heel of your hand, then folding it back over itself. Continue kneading for about 8-10 minutes until the dough is smooth and elastic. It should spring back when you press it lightly with a finger.
  4. Place the dough in a lightly oiled bowl, turning it to coat all sides with oil. Cover the bowl with a clean kitchen towel and let the dough rise in a warm, draft-free area until it doubles in size. This should take about 1 to 2 hours, depending on the ambient temperature.
  5. Once the dough has risen, gently punch it down to release excess gas. Turn it out onto a floured surface and shape it into a loaf by folding the edges into the center and rolling it into a tight cylinder. Sprinkle 2 tbsp of sesame seeds on the surface and gently press them into the dough.
  6. Preheat your oven to 220°C (428°F). Place the shaped loaf onto a baking sheet lined with parchment paper. Let it rest for another 15 minutes to allow it to rise slightly again.
  7. Bake the loaf in the preheated oven for about 25-30 minutes. The loaf is done when it is golden brown on top and sounds hollow when tapped on the bottom.
  8. Remove the loaf from the oven and transfer it to a wire rack to cool. Allow it to cool for at least 30 minutes so the crumb sets properly and doesn't become gummy when sliced.
  9. Serve the American Seed Loaf 2 warm, slicing it at the table to share with your meal. Enjoy the crunchy sesame seed crust and the soft, flavorful interior.
