Ingredients

  • 500 gflour
  • 7 gyeast
  • 250 mlmilk
  • 50 gbutter
  • 1 tspfine sea salt

Method

  1. In a large mixing bowl, combine 500 g of flour and 7 g of yeast. Warm 250 ml of milk until it's just lukewarm to the touch, about body temperature, and pour it into the flour mixture. Add 50 g of softened butter and 1 tsp of fine sea salt. Mix the ingredients together using your hands or a wooden spoon until a shaggy dough forms.
  2. Transfer the dough onto a lightly floured surface. Begin kneading by folding the dough over itself and pushing it down with the heel of your hand. Continue kneading for about 10 minutes, until the dough becomes smooth and elastic. You'll know it's ready when it springs back slightly when pressed with a finger.
  3. Place the kneaded dough in a lightly greased bowl, turning it once to coat the surface with oil. Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm, draft-free area until it doubles in size. This should take about 1 to 2 hours, depending on the room temperature.
  4. Once the dough has risen, gently punch it down to release the air. Transfer it back to the floured surface and divide it into equal portions, about the size of a small lemon. Shape each portion into a smooth ball by tucking the edges underneath and rolling it gently between your palms.
  5. Preheat your oven to 375°F (190°C). Arrange the shaped dough balls on a baking sheet lined with parchment paper, leaving space between each roll for expansion. Cover them with a towel and let them rise again for about 30 minutes, until they are puffy and almost doubled in size.
  6. Bake the rolls in the preheated oven for 15 to 20 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom. Remove them from the oven and immediately transfer the rolls to a wire rack to cool slightly. This helps set the crumb and keeps the bottoms from getting soggy.
