Indian Soft Rolls 2, a staple in many Indian homes, are often made with a practiced hand, where intuition guides the process more than precise measurements. These rolls are typically prepared for family meals, adding a comforting warmth to both everyday dinners and special occasions. The recipe reflects the informal yet attentive approach of Indian home cooks, with salt added by feel and butter contributing to their rich texture.

Ingredients

  • 500 gflour
  • 7 gyeast
  • 250 mlmilk
  • 50 gbutter
  • 1 tspfine sea salt

Method

  1. In a large mixing bowl, combine 500 g of flour and 1 tsp fine sea salt. In a separate small saucepan, gently warm 250 ml of milk until it's lukewarm—not hot, just warm to the touch. Add 7 g of yeast to the milk, stirring until it dissolves completely. This will activate the yeast, which is essential for the dough to rise.
  2. Pour the yeast mixture into the flour and salt, then add 50 g of softened butter. Mix everything together using your hands or a wooden spoon until a shaggy dough forms. Transfer the dough onto a lightly floured surface and knead it for about 10 minutes. The dough should become smooth and elastic, indicating that the gluten has developed properly.
  3. Place the kneaded dough into a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place. The dough should double in size, which typically takes about 1 to 2 hours, depending on the ambient temperature. This rising process is crucial for achieving soft and airy rolls.
  4. Once the dough has risen, gently punch it down to release any air bubbles. Divide the dough into equal portions, shaping each piece into a smooth ball by tucking the edges underneath. Arrange the balls on a baking tray lined with parchment paper, leaving space between them for expansion.
  5. Preheat your oven to 200°C (392°F). Allow the shaped rolls to rest for another 20 to 30 minutes until they puff up slightly. This second rise will ensure the rolls are light and fluffy.
  6. Bake the rolls in the preheated oven for about 15 to 20 minutes, or until they turn a golden brown color on top. The rolls should sound hollow when tapped on the bottom, indicating they are fully baked.
  7. Remove the rolls from the oven and immediately transfer them to a wire rack. Allow them to cool slightly, which helps set the crumb and prevents them from becoming soggy.
