Method

  2. In a small bowl, mix 40 grams of starch with a small amount of the warm milk mixture to create a smooth slurry. This step prevents the starch from clumping when added to the hot liquid.
  3. Slowly pour the starch slurry back into the saucepan with the milk mixture, stirring continuously. Continue to cook over medium heat, stirring constantly to prevent sticking, until the mixture begins to thicken. You'll know it's ready when it coats the back of a spoon and leaves a trail when you run your finger through it.
  4. Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. This adds a warm, aromatic flavor to the pudding. Ensure the vanilla is fully incorporated for a consistent taste.
