American Milk Pudding

American Milk Pudding is a cherished dessert that finds its place on the table when comfort and simplicity are the order of the day. Often prepared for weekend family dinners or as a sweet surprise on a quiet weekday night, this pudding reflects the American knack for turning basic pantry staples into something memorable. It's a dish that has been passed down through generations, with each cook adding their personal touch, yet always returning to its comforting roots.

The pudding is a silky blend of milk, sugar, and vanilla, thickened to a creamy consistency with just the right amount of starch. Each spoonful offers a gentle sweetness, with a smooth texture that’s both rich and satisfying. It's the kind of dessert that doesn’t need adornment, letting the pure flavors speak for themselves. A generous serving is a warm hug in a bowl, inviting you to savor each moment.

Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. In a medium saucepan, combine 1 liter of milk and 100 grams of sugar. Place the saucepan over medium heat and stir gently with a wooden spoon until the sugar is completely dissolved. This ensures the pudding will be smooth and evenly sweetened.
  2. In a separate small bowl, mix 40 grams of starch with a few tablespoons of the warm milk mixture. Stir until the starch is fully dissolved, creating a slurry. This step prevents lumps from forming in your pudding.
  3. Slowly pour the starch slurry back into the saucepan with the milk and sugar mixture, stirring continuously. Keep the heat at medium and continue stirring until the mixture begins to thicken. You'll know it's ready when it coats the back of the spoon and leaves a trail when you run your finger through it.
  4. Once thickened, remove the saucepan from the heat and stir in 1 teaspoon of vanilla. The vanilla should be added off the heat to preserve its delicate flavor. Stir thoroughly to ensure the vanilla is evenly distributed throughout the pudding.
  5. Pour the pudding into individual serving dishes or a large bowl. Allow it to cool slightly at room temperature before covering with plastic wrap. Ensure the plastic wrap touches the surface of the pudding to prevent a skin from forming.
  6. Chill the pudding in the refrigerator for at least 2 hours, or until it is fully set and firm to the touch. The pudding should have a smooth, creamy texture that holds its shape when served.
  7. Serve the American Milk Pudding chilled, optionally garnished with a sprinkle of sugar or a few nuts for added texture. Enjoy it as a comforting dessert that brings a touch of nostalgia to the table.
