American Syrup Cake 2

American Syrup Cake 2 is a beloved fixture at home gatherings across the United States. This cake, deeply rooted in the tradition of American home cooking, reflects the practicality and resourcefulness of its makers. It's a dish you might find at a Sunday family dinner or a holiday spread, where the focus is on sharing and savoring the simple pleasures of life. Passed down through generations, this cake carries with it the warmth of home kitchens where salt is judged by hand and butter is never spared.

The texture of the cake is a harmonious blend of semolina's gentle graininess and the moist, buttery richness that comes from a generous soak in syrup. As you take a bite, the sugar's sweetness melds perfectly with the buttery undertones, creating a flavor that is both comforting and indulgent. This cake requires no elaborate presentation; its beauty lies in its rustic charm and the heartfelt tradition it represents.

Ingredients

  • 200 gsemolina
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by bringing 100 g of butter to room temperature so it becomes soft and easy to work with. This will ensure it creams smoothly with the sugar, creating a light and airy texture in the cake. Also, take out 3 eggs from the refrigerator and let them come to room temperature to ensure they mix evenly into the batter.
  2. In a large mixing bowl, combine the softened butter with 150 g of sugar. Use a hand mixer or stand mixer to cream them together until the mixture is pale and fluffy, which should take about 3 to 5 minutes. This step is crucial as it incorporates air into the batter, giving the cake its tender crumb.
  3. Add the room-temperature eggs to the creamed butter and sugar, one at a time, mixing well after each addition. This gradual incorporation helps maintain the emulsion and prevents the batter from curdling. Continue mixing until the eggs are fully integrated and the batter is smooth.
  4. Gradually add 200 g of semolina to the wet mixture, folding it in gently with a spatula. Ensure that the semolina is evenly distributed throughout the batter, which will give the cake its characteristic texture. The batter should be thick but pourable.
  5. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or line it with parchment paper to prevent sticking. Pour the batter into the prepared pan, smoothing the top with a spatula to ensure even baking.
  6. Place the cake pan in the preheated oven and bake until the cake is golden brown and a toothpick inserted into the center comes out clean, indicating that the cake is fully cooked. The top should spring back lightly when touched, which usually takes about 25 to 30 minutes.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. This brief cooling period will help the cake firm up slightly, making it easier to handle.
  8. While the cake is still warm, pour the syrup evenly over the top, allowing it to soak into the cake. The syrup should be absorbed completely, giving the cake its moist and rich flavor. Serve the cake warm or at room temperature, perfect for sharing at the table.
