American Syrup Cake

American Syrup Cake is a comforting dessert that brings together semolina, sugar, and butter, creating a rich and indulgent treat. It's a staple at American home tables, where cooks rely on instinct to balance salt and generously use fat, ensuring a moist and flavorful cake.

This home-style version is all about simplicity and taste, with the semolina providing a unique texture and the syrup adding a sweet, sticky finish. It's a dish meant for sharing, embodying the warmth and hospitality of American family gatherings.

Ingredients

  • 200 gsemolina
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Start by bringing 100 g of butter to room temperature. This will make it easier to cream with the sugar, ensuring a smooth batter. Crack 3 eggs into a bowl and let them sit at room temperature as well, which will help them incorporate more evenly into the batter.
  2. In a large mixing bowl, cream together the softened butter and 150 g of sugar. Use a wooden spoon or an electric mixer on medium speed until the mixture is light and fluffy. This process incorporates air, which is essential for a tender cake texture.
  3. Gradually add the room temperature eggs, one at a time, to the butter and sugar mixture. Beat well after each addition until fully incorporated. This gradual addition prevents the batter from curdling and ensures a smooth mixture.
  4. Slowly fold in 200 g of semolina into the wet mixture using a spatula. Gently mix until the semolina is fully integrated, taking care not to overmix, which can make the cake dense. The batter should be thick and slightly grainy from the semolina.
  5. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan generously with butter. Pour the batter into the prepared pan, smoothing the top with a spatula to ensure even baking.
  6. Bake the cake in the preheated oven until the top is golden brown and a toothpick inserted into the center comes out clean, indicating the cake is fully baked. This should take approximately 25-30 minutes, but rely on the visual cue and toothpick test for doneness.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. While the cake is still warm, pour your chosen syrup evenly over the top, allowing it to soak into the cake. The syrup will add moisture and sweetness, enhancing the cake's flavor.
  8. Let the cake absorb the syrup completely before serving. This can take an additional 20-30 minutes. Serve the cake warm or at room temperature, allowing the flavors to meld and the texture to set perfectly for a delightful dessert experience.
