Ingredients

  • 500 gseasonal fruit
  • 150 gsugar
  • 200 mlwater
  • 1 stickcinnamon

Method

  1. Begin by preparing your 500 g of seasonal fruit. Choose a mix of ripe tropical fruits such as mangoes, papayas, and pineapples. Peel, core, and chop them into bite-sized pieces, ensuring they are uniform in size for even cooking. Set the fruit aside in a large bowl.
  2. In a medium-sized saucepan, combine 150 g of sugar and 200 ml of water. Add 1 stick of cinnamon to the mixture. Place the saucepan over medium heat and stir gently until the sugar dissolves completely, creating a simple syrup. The syrup should be clear and lightly fragrant with cinnamon.
  3. Once the syrup is ready, add the prepared fruit to the saucepan. Stir gently to coat the fruit evenly with the syrup. Allow the mixture to come to a gentle simmer, ensuring that the heat is not too high to prevent the fruit from breaking down too quickly.
  4. Cook the fruit in the syrup for about 10-15 minutes, stirring occasionally. You want the fruit to soften but still hold its shape. The compote is ready when the fruit is tender and the syrup has thickened slightly, coating the fruit with a glossy sheen.
  5. Remove the saucepan from the heat and let the compote cool slightly. The cinnamon stick can be removed at this point if a milder flavor is preferred, or left in for a stronger cinnamon taste.
