Caribbean Fruit Compote

Caribbean Fruit Compote is a cherished staple, a sweet and fragrant offering that graces home tables across the islands. Made with the best fruits of the season, it’s a recipe passed from one generation to the next, capturing the bounty of the Caribbean in each spoonful. This is the version found in homes — where salt is judged by hand, fat flows generously, and the table is always set for sharing.

Expect a luscious medley of tender fruits infused with the warm spice of cinnamon, all enveloped in a syrupy embrace. The compote should be a balance of sweet and subtly spiced, with the fruits soft yet holding their shape. Serve it warm or chilled, perhaps alongside a scoop of ice cream or a dollop of cream, letting its rich flavors shine.

Ingredients

  • 500 gseasonal fruit
  • 150 gsugar
  • 200 mlwater
  • 1 stickcinnamon

Method

  1. Start by preparing your fruit. Use 500 g of seasonal fruit such as mango, pineapple, or papaya. Peel and chop them into bite-sized pieces. This will ensure even cooking and a harmonious blend of flavors.
  2. In a medium saucepan, combine 150 g of sugar and 200 ml of water. Add 1 stick of cinnamon to the mixture. Stir gently over low heat until the sugar dissolves completely, creating a clear syrup. The cinnamon stick will infuse the syrup with a warm, spicy aroma.
  3. Increase the heat to medium and bring the syrup to a gentle simmer. Add the prepared fruit to the saucepan, ensuring all pieces are submerged in the syrup. Stir occasionally, allowing the fruit to soak up the flavors and soften.
  4. Continue to cook the mixture, maintaining a gentle simmer. The fruit should become tender but not mushy, and the syrup should thicken slightly. You'll know it's ready when the fruit is soft to the touch and the syrup lightly coats the back of a spoon.
  5. Remove the saucepan from heat and let the compote cool slightly. The flavors will continue to meld as it cools. Serve the Caribbean Fruit Compote warm or at room temperature, allowing the natural sweetness and spices to shine through.
